Bruce’s efforts have had a transformative impact on the organizations he’s worked with, as he has consistently driven cost reductions and improved procurement processes to help businesses optimize their bottom line.
As Vice President of Procurement at Bowlero Corp in New York, NY, Bruce led the procurement function for the world’s largest operator of bowling centers, overseeing procurement across approximately 350 locations and 15,000 employees across North America. In this role, Bruce was instrumental in driving annual savings of $2.5 million by identifying cost-saving opportunities in areas such as amusements, chemicals, credit card processing, office supplies, travel, and utilities. One of his key accomplishments was building and leading the Procurement Department from the ground up, developing a highly effective team that worked collaboratively with senior stakeholders across departments like Loss Prevention, Operations, Sales, Marketing, Payroll, Training, and IT. Before his tenure at Bowlero, Bruce served as the Corporate Director of Purchasing at Loews Hotels. Overseeing 37 national corporate purchasing programs, Bruce was responsible for negotiating and managing contracts totaling more than $68 million annually. His ability to identify opportunities for cost savings was exemplified by the $1.7 million in savings he generated over five years through the national copier program he pioneered. Additionally, Bruce negotiated a group purchasing organization agreement that saved the company more than $1 million annually on food and non-food products. He also collaborated with Keurig to develop and pilot the industry’s first in-room K-Cup coffee brewers, resulting in $1.28 million in savings over five years.
Bruce’s earlier career began at Doral Arrowwood, where he worked as the F&B Purchasing Manager.
